Greens, Glorious Greens with Soba Noodles



Here's a good example of a full meal in a bowl using all raw ingredients (except for the noodles, of course). For the most part I don't think people consider using bok choy raw, we always steam, saute, stir fry, or in some way prepare bok choy cooked. Here's a nice way to incorporate it in its raw state.

In a large bowl whisk together the following ingredients for your dressing:

2 tablespoons cold pressed sesame oil
2 tablespoons rice vinegar (or lemon juice)
2 tablespoons tamari
1 tablespoon of either maple syrup, agave nectar, or honey
1 clove of garlic, minced
2 teaspoons fresh ginger, minced
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin

Next prepare the following vegetables:
3 stalks of celery, sliced
3 to 4 cups thinly sliced bok choy
3 green onions, sliced
1 carrot, grated
1/4 cup cashews, chopped

Cook a package (usually about 10 oz. or so) of soba noodles in boiling water until tender. Drain in a colander and rinse under cold water. (You can "reheat" the noodles by running them under hot water if you wish).

To assemble: Put noodles in the big bowl with the dressing and toss to throughly coat the noodles. Then add in the vegetables and cashews and give it all a good toss again. Dinner is served with great leftovers for lunch tomorrow.
