A Quickie

Tonight we were out with friends to see the Van Morrison concert and needed a no-fuss dinner option in order to have something to eat before heading off to the show. Tuna (tinned) and pasta make for a quick dinner option.

Fettuccine with Tuna (serves 4)
375 grams fettucine
2 tablespoons olive oil
1-2/ medium garlic cloves, minced
1 (170 gram) can tuna, drained
1 cup chicken or vegetable stock
1/2 cup pitted black olives, coarsely chopped
1 to 2 teaspoons finely grated lemon zest
2 tablespoons fresh lemon juice
salt and freshly ground pepper to taste
Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add fettuccine and cook until just tender (8 to 10 minutes). Drain (you may want to reserve some of the cooking water to mix in with the pasta in case it's too dry) and put in a large bowl with the olive oil and toss to coat. Add the remaining ingredients, toss and serve.
